My daughter and I made these for Thanksgiving in 2018 and they were so beautiful and delicious.
Ingredients:
Nonstick cooking spray with flour
3 cups flour
1 Tbsp baking powder
1/2 tsp salt
1 2/3 cup sugar
3/4 cup butter, softened
3 large eggs
2 Tbsp finely grated orange peel
2 tsp vanilla extract
3/4 cup buttermilk
1 cup semisweet chocolate mini chips
1 cup fresh cranberries, chopped
Glaze:
2 cups white chocolate (12 oz)
1/4 cup orange juice
1 tsp grated orange peel
Preheat oven to 350 degrees F. Spray mini bundt cake pans. Combine flour, powder and salt in a large bowl. Beat sugar and butter until creamy, beat in eggs. Add orange peel and vanilla. Add flour mixture with buttermilk. Stir in chocolate chips, fold in cranberries. Spoon into pans 3/4 full. Bake 18-20 minutes until wooden pick comes out clean, and cake is golden. Cool in pan for 10 minutes. Invert to release cakes and cool completely on a cooling rack. Drizzle with glaze.
Glaze: Microwave white chocolate for 1 minute, stir, microwave for 10 second intervals until melted. Whisk in orange juice, and grated orange peel. Stir until smooth. Add more orange juice if needed.
