Slow Cooked Brisket Chili

Ingredients:
4 lbs. brisket (optional 18 hour smoked brisket)
2 bottles beer
1 28 oz can diced tomatoes
1 Tbsp olive oil
Salt and Pepper to taste
2 small diced yellow onions
1 small diced red onion
6 garlic cloves, minced
2 small jalapenos
1 small poblano pepper
2 small chipotle peppers in adobe sauce
1 small red bell pepper
1 small green bell pepper
2 cans chickpeas, drained and rinsed
2 cans black beans, drained and rinsed
2 cans kidney beans, drained and rinsed
6 28 oz cans tomato sauce
1/2 cup chili powder
1/3 cup cumin
1/4 cup oregano
1/2 Tbsp cinnamon
2 oz dark chocolate, add at the end once everything is together so it doesn't burn

Add ins:
green onions
sour cream
cheddar cheese

Method:
Make a grill or pan really hot, sear the surfaces of the Brisket for a couple minutes.
Place Brisket, beer, tomatoes, salt and pepper in a slow cooker for 8 hours.  Do you have a really giant slow cooker?  You can add everything to it, otherwise, let that slow cook while you add the rest of the ingredients to a large pot and simmer a couple hours before adding the brisket ingredients, once the meat is falling apart to the chili pot.
