People aren't eating all that rice... In my experience... you only need a pot of 4 cups dry to feed 50 people when you also have tacos, chips and tostadas. When google tells you to cook 12 cups dry, its overdoing it. If you only have rice and no other starch, then do more. We barely skimmed the surface of our massive pot. It was so yummy though.
Ingredients:
4 cups rice
1 Tbsp oil
1 little can tomato paste
1 tsp garlic powder
1 tsp onion powder
1 tsp fresh ground cumin
2 anaheim peppers, sliced in half and seeded.
8 cups chicken broth
1 lime
Method:
Toast rice in avocado oil, in a large saucepan. Once toasty, add the rest of the ingredients, mix then bring to a boil, simmer for 10 minutes, cover with lid and let rest for 10 minutes. Fluff with a fork before serving.
