Waffle Love copycat

This waffle recipe is an experience.  I modified it to how I made them recently and they are delicious with buttermilk syrup, strawberries and whipped cream on top.

Make these the night before.

Ingredients:

3/4 cup scalded milk
2 Tbsp warm water
1 tsp sweetener, to feed yeast
2 tsp yeast
2 eggs, beaten (or 2 Tbsp flax meal with 1/4 cup water)
1 cup butter, softened
3 Tbsp granulated sugar
3 Tbsp honey
2 tsp vanilla
4 cups of flour
4 oz pearl sugar (1 cup of you love a lot)

Method:

To scald milk, place in a pot until the edges bubble and a film develops over the milk.  Let it cool, you can do this quicker by placing the pot over a bowl of ice.  Put the warm water, yeast and sweetener in a small bowl to make sure the yeast activates, bubbles.  Place the butter, sugar and honey in a mixing bowl and mix until creamy. add the yeast mixture, eggs, milk, and vanilla to the mixing bowl, mixing in the flour slowly until the dough slightly pulls away from the sides of the bowl.  Once mixed, let rise for at least 4 hours, add the pearl sugar, divide into 8 balls.  This dough will be soft and thick.  Let the balls rest covered for an hour to cook right away, or put them directly in the refrigerator, remove them from the refrigerator an hour before cooking to let them come to room temperature.  Heat your waffle iron, then place each ball, one at a time, in the center of the iron.  Top with plain yogurt, strawberries, fresh whipped cream, and buttermilk syrup.

Top with Chocolate hazelnut spread, and whipped cream.

Top with Pineapple, coconut flakes and coconut syrup.

Top with cheese, bacon and maple syrup.

Top with peanut butter and jelly.

(you can make vegan)
