Zucchini Lasagna

 Ingredients:

4 medium zucchinis, sliced thin long ways

1 medium onion, chopped

4 garlic cloves, minced (or one tsp garlic powder)

1 28oz jar of marinara sauce, I love Rao's because it has clean ingredients.  I also found a good Tomato Sauce without citric acid.

1 lbs. ground beef

1 tsp dried oregano

1 tsp dried basil

1 tsp dried thyme

salt and pepper to taste

*Any of the herbs can be substituted for 1/4 cup of the herb chopped in its fresh form.

*This recipe can be simplified to pouring plain marinara over the sliced zucchini.

Method:

In a large pan, sauté the onions with a little water until brown, add the garlic, sauté one minute, then add the ground beef until browned.  Pour in the marinara sauce and add the herbs. Simmer for an hour on low heat.

Preheat oven to 350 degrees F.

Place one layer of zucchini in a 9 x 9-inch pan, then spread sauce on top, then another layer of zucchini, then sauce.  Depending on number of layers, alternated zucchinis and sauce until you end with sauce on top.  Cook for 40 min or until Zucchini are soft.  Serves 2-4.

Enjoy.
