2 C. rolled oats
1/4 C. packed brown sugar
1/2 C. wheat germ
3/4 t. ground cinnamon
1 C. whole wheat flour
3/4 t. salt
3/4 C. of something special* (raisins, craisins, etc.)
1/4 C. flax seeds
1/4 C. honey (plus or minus some)
1 egg, beaten
1/2 C. vegetable oil
2 t. vanilla extract
Preheat the oven to 350 degrees. Generously grease a 9x13 inch baking pan. (I usually double or triple it and make it on a cookie sheet - aka jelly roll pan.) Mix the dry ingredients. Mix the wet ingredients, and then add to dry ingredients. Press the mixture evenly into prepared pan. Bake for 20-30 minutes in the preheated oven, until the bars begin to turn golden at the edges. Cool for 5 minutes, then cut into bars while still warm. Do not allow the bars to cool completely before cutting, or they will be too hard to cut.
This recipe was given to me by our follower Chelsea... which I passed on to Sophi a while ago.
