Lion House Rolls

4 T. yeast
4 C. really warm water
2/3 C. sugar
2/3 C. canola oil
5 t. salt
1 1/3 C. nonfat dry milk
11 C. flour (give or take a little) I like to use half whole wheat half white flour.
2 eggs

In an electric mixer, combine yeast and water. Let stand 5 minutes. Add sugar, oil, salt, dry milk, 4 cups flour and eggs. Beat until very smooth. Switch to dough hook and add 4 more cups of flour, one at a time, and beat until smooth. Add remaining flour 1/2 cup at a time until the dough pulls away from the side. Let knead for 5-10 minutes in mixer. Grease a bowl and put dough in bowl. Soak a towel in hot water, ring out, and put over bowl while dough rises. Let rise in a warm place until triple in bulk, about an hour. Mold into desired shapes. Let rise 1 1/2 hours. Bake at 400 degrees for 15-20 minutes until golden brown. Remove from oven and brush with melted butter.
