Fajitas

This was so great to make with the help of Nix and my egg slicer.

1 Tbsp Butter
1 Tbsp Olive Oil
1 Yellow Onion, sliced thin
Costco size thing of button mushrooms :), sliced thin (I could have said a whole shiz load of mushrooms)
One bell pepper, sliced thin (any color would do, my favorite is yellow)
Pepper Jack Cheese
Corn Tortillas

The tricky part is the timing of the food in the skillet.
Heat up a family size skillet with the butter and olive oil.  Once the fat is hot, start to brown the onion on medium heat.  Once the onion is brown add the mushrooms, don't cover the pan cuz the mushrooms produce a lot of moisture, once the mushrooms are almost soft, add the peppers, then put the heat on low and cover.  If bell peppers are cooked too long they lose their brilliant color.
In a frying pan place tortillas and a slice of cheese on top, heat the cheese through, place on a plate, then top with the mushroom mixture.  You can add meat to this dish if you'd like. (sliced steak, chicken, shrimp)

The other tricky part is slicing all those mushrooms.  I put my 3 year old on the counter with the mushrooms and an egg slicer and he sliced away.  It went way quicker than trying to slice each one with a knife (I just hate to buy the pre-sliced food, even though it does save time).  And he is so happy to help and feel like he did a good job!  Easy, Delicious, Wholesome meal!
