I'm trying to incorporate more wheat and beans into my family's diet for more protein and fiber. So if you want to do the same, this recipe is for you! It is delicious and nutritious.
1 cup whole wheat
1 1/2 cups chicken broth
2 cups water
1 chopped yellow onion or 1/4 cup dehydrated onions to add to cooking wheat (or 2 green onions diced to add to salad)
1 1/2 cups black beans
1 1/2 cups frozen corn
2 medium tomatoes diced
Cilantro to taste, I use about 1/4 cup mildly diced (2 Tbsp would do)
1 Tablespoon Olive Oil (optional)
1/4 cup crumbled feta cheese (optional)
Cook wheat with chicken broth, onions (if using yellow or dehydrated) and water. I boil for 30 minutes and simmer for an additional 90 minutes. Cook to your likeness. Meanwhile dice the remainder of ingredients and mix in a bowl. When Wheat is cool, mix everything together and refrigerate. Serve as a salad, main dish, or roll in a tortilla.

I made this salad similar to what Briana made. I made the Wheat meat tostadas and had a bag of cooked wheat leftover and it had the taco seasoning in it. So to the wheat I just added a can of corn a can of cooked chicken (from costco), tomato, cilantro, chopped cabbage then I minced some garlic with my garlic press. I added a little olive oil, lemon juice, salt and pepper. It was so delicious!!
