This dish has an unusual but extremely delicious flavor unlike anything I have ever made! All the oil and chicken juices are absorbed into the potatoes and cabbage. So if you are using fatty chicken I recommend cutting off all excess fat.
1/3 large head of cabbage
One sweet potato
2 large garlic cloves
2 large frozen boneless skinless chicken breasts
3 Tbsp olive oil, divided
1 tsp Jamaican Jerk Rub (or your choice chicken seasoning)
Juice of 1/2 lemon
1 1/2 Tbsp white wine vinegar
1 tsp salt
1/3 cup sweetened coconut flakes
Preheat oven to 350 degrees F.
In a 9"x13" pan, spread sliced cabbage, sliced garlic cloves and sliced sweet potatoes. Toss with 1 Tbsp olive oil. Place Chicken on top and sprinkle with JJ Rub. In a separate bowl mix remaining olive oil, lemon juice, vinegar, and salt. Drizzle over chicken and veggies. Bake for about 80 minutes (you need to have the chicken frozen cuz the veggies take longer to cook than thawed chicken) So the alternative would be to bake the veggies first for 40 minutes then add the chicken if it is thawed. Sprinkle coconut over dish and bake an additional 10 minutes.
