My mom makes this Broccoli Salad. It is a base for so much healthy broccoli salads in your life. I love that it has broccoli in it, because broccoli contains most of the essential nutrients you body needs. And it is so delicious.
Ingredients:
2 crowns of broccoli, chopped
3 carrots, diced or shredded
2 green onions sliced, or half a small red onion, diced
1 handful cherry tomatoes, cut in half
1 handful crasins
1 handful cashews
4 oz blue cheese
Poppy seed dressing
*optional- hard boiled eggs
Method:
Combine everything together and eat right away. If you want to make a lot and eat it throughout the week, leave the cashews, blue cheese and poppyseed dressing off and maybe even the craisins, and add each day right before you eat.
Add 1 cup of cooked quinoa for more protein. If you don't like added sugar, leave the craisins out completely, or use raisins instead. I also love to use feta cheese, or goat cheese instead of blue cheese sometimes. I also will use toasted sliced almonds, pumpkin seeds or sunflower seeds instead of cashews. For a healthier dressing options, use a homemade dressing or drizzle with lemon juice, maple syrup, salt and pepper. Have you heard of Atlantic Dulse? It's a salt alternative, you can use it in place of salt, and can find it in the spice isle of Whole Foods. It is a type of seaweed and naturally contains iodine. I've also heard that it removes heavy metals from your body.
