Elderberry Syrup

Ingredients:

3/4 cup dried elderberries

3 cups water

3/4 cup raw honey

Optional Additions:

1 cinnamon stick

1 star anise

1/4 tsp cloves

Method:

Place the dried elderberries and water in a saucepan with optional spices on medium high heat for about an hour until thick and reduced by half.  Remove and cool.  Strain syrup into a bowl, pressing the liquid out of the berries with a wooden spoon.  Stir in the raw honey and pour into jars.  Enjoy 1 Tbsp a day for health or 3 times a day for sickness.  Keep for up to 4 weeks in the refrigerator.
