Asian Chopped Salad

Ingredients:

1 head green cabbage, shredded

1 head romaine lettuce, sliced

1/2 head purple cabbage, shredded

1 red bell pepper, chopped

1 cucumber, chopped

2 stalks celery, chopped

1/2 cup cilantro, chopped

2 Tbsp sesame seeds

1/4 cup slivered almonds

8 oz mushrooms, sliced


Dressing:

1/3 cup lemon juice

3 Tbsp creamy almond butter

1 Tbsp maple syrup

2 tsp coconut aminos

1 tsp fresh ginger

1 tsp hot sauce

pinch of salt

optional* 2 tsp sesame oil

optional* 1 cup cooked quinoa

optional* substitute peanuts and peanut butter for the almonds and almond butter

You might want to add the mushrooms as a garnish to each salad, since they get slimy if you want to eat the next day.

Toss together, Enjoy!  I love knowing how healthy the dressing is, that I don't leave anything in my bowl.

Definitely a regular recipe!
