I am not into being fussy about some recipes and I'm not about to steam my rice when I hardly have time to do anything around the house that I want to do. So, with that said, here is the recipe of how I made sweet coconut rice, and it turned out pretty good, probably too good.
INGREDIENTS
2 cups of white rice (soaked for 1 hour and rinsed)
1 can coconut milk
1 cup coconut cream
1 tsp salt
1 cup water
1 cup sugar
METHOD
Cover the rice with water and let it soak for at least an hour, or overnight (put water over the rice a couple inches.) When the rice is done resting, drain the water and rinse the rice until the water is clear. Place sugar, salt, coconut milk and water in a pot on the stove, over medium heat, When the sugar is dissolved, add the rice, bring to a light boil, cover and remove from heat. Let the rice rest for 20 minutes, add the cream, and serve warm with sliced mangos.
