Cheese Dip

1/2 lb pepper jack cheese
1/2 lb cheddar cheese
2 cups whole milk ( reserve 1/3 cup to mix with flour)
4 Tbsp flour
1/4 cup salsa (any variety and more if you'd like)

In a medium size pot, heat cheese and milk until melted. Don't boil. Mix flour with reserved milk til smooth. Pour into cheese mixture. Cook for 15 min. Add salsa. It will thicken as it cools. It works best if you make it the day before, refrigerate then reheat when you want to use it.
