I bought a whole chicken at Trader Joes, stuck it in my crockpot with a few other things, and it was DELICIOUS!!
1 whole chicken that will fit in your crock pot
2 heads of garlic
1 medium lemon
1 medium onion
1/2 cup water
1 tsp dried thyme
1/4 tsp turmeric powder
salt and pepper to taste
1 Tbsp dried rosemary
Remove the back of extra chicken things. Turn your frying pan in high heat and brown the skin of the chicken. Put the chicken in your crockpot. Leave the frying pan on high. Cut a lemon into 8 pieces and squeeze the juice into the frying pan with about 1/2 cup of water. Put the lemon rinds around the chicken. Let the liquid simmer while throwing in the cloves from 2 whole garlic heads, and a chopped onion. Once the pan is deglazed, pour this mixture over your chicken, which is in the crock pot. Now move everything down and around the chicken, and dust your chicken with the following spices, thyme, turmeric powder, black pepper, and salt. Rub this into the chicken and put the lid on your crock pot. Turn it on High heat for 4 hours, when you have about 30 minutes left sprinkle with rosemary. I read somewhere that the rosemary tastes weird if it cooks in there the whole time. So why not wait till the end.
Adding chicken broth to the recipe is silly, it's a chicken, they make chicken broth, so that's why I put water in it. The lemon is a tenderizer, and the flavor was amazing. I read a few recipes and came up with this one. I hope you enjoy it as much as I did! We ate the garlic cloves with the chicken. The sauce that remains in the bottom can keep, it's chicken broth!! I put the water that I steamed asparagus in into the chicken juice. I added all the chicken bones in the crockpot and left it on low all night, drained the bones this morning, and put the broth in my fridge. I'm making enchiladas on Monday!
