Fresh Fruit with Honey Vanilla Yogurt

Here's a simple way to make fresh fruit a treat for breakfast. It's so easy to stir together and it lasts for a week in the refrigerator.

2 C. plain yogurt
2 T. good honey
1/2 t. pure vanilla extract
Seeds scraped from 1/2 vanilla bean (optional)
1/2 pint fresh blueberries
1/2 pint fresh raspberries
1 pint fresh strawberries, hulled and cut in half
1 papaya, peeled, seeded and diced

Combine the yogurt, honey, vanilla extract and vanilla bean seeds, if using. Gently mix the berries and papaya together. Spoon the fruit into serving bowls and top with the yogurt.
