English Muffins

1 2/3 cups lukewarm milk
1 Tbsp yeast
1 Tbsp melted butter or olive oil
corn meal for dusting
2 cups whole wheat flour
2 cups sifted white bread flour
1 1/2 tsp salt
1/2 tsp sugar

Flour a baking sheet.  Lightly grease a griddle.  Heat up milk (I do it in the microwave) add yeast, sugar and butter or oil, mix and set aside to brew. Mix flours and salt into a medium size bowl, pour milk mixture into flour mixture and mix/ beat for 4-5 minutes, until smooth and elastic.  Cover with oiled plastic wrap and leave in warm place to rise, I make the oven warm for a couple minutes, then turn it off before I place the dough in it, and it doubles in bulk in about 30 minutes, otherwise it may take up to 60 minutes.  Turn on floured surface, roll out to 1/2 inch thick, using a 3 inch cutter, cut in 9 rounds.  Dust with corn meal and place on baking sheet to rise, cover with a towel, 20-30 minutes.  Warm the griddle on medium heat.  Cook the muffins slowly in batches for about 7 minutes on each side, or until golden brown.  Cool on wire rack.
