
This isn't the prettiest picture and they look a little greasy but they weren't too bad. They were unbelievably delicious. So I made my taco salad recipe and had some leftover ground beef which had the taco seasoning in it. So like two days later I still had the ground beef in the fridge. I HATE throwing food away so I had to make something with it. One of the staples in our house is quesadillas. I'm obsessed with cheese!!! I had never thought to use ground beef in a quesadilla so I tried it. We had some corn tortillas and pepper jack cheese. That is a must have in our fridge. When I make quesadillas I put about a tablespoon of olive oil in my frying pan then put the tortilla in the pan. Put a layer of cheese, then add the meat and then another layer of cheese, topped with the other tortilla. Cook for a few minutes and then flip over. I like to put a lid over the pan while it's cooking so the cheese gets really melted. When it's all done put on a cutting board and use a pizza wheel to cut it. My sister Briana showed my that trick which is so much easier than trying to cut it with a knife. I've made these with chicken, and they are so good with leftover mashed beans too. My kids love them!!
