
1 C. Cottage Cheese
1/2 C. Oats
6 Eggs (only use two of the yolks) You can use all whites if you prefer, but I think the yolks have some healthy fats in them, so I like to use a few.
1 t. Vanilla
4 T. Sugar
Dash of Cinnamon
Mix ingredients in a blender. Cook on griddle and serve. Makes 20-24 pancakes.
