Wheat Meat and Bean Tostadas


Here is another attempt to use whole wheat.  My 3 year old loved them!

1 cup whole wheat
4 cups water
Taco Seasoning
Refried beans (I make my own from dried pinto beans)
1 medium tomato diced
1 small orange pepper diced
1/4 cabbage, sliced
plain yogurt (2 tsp) per tostada
pack of 4 inch round corn tortillas
Olive oil for frying tortillas

First cook wheat until soft, or to your likeness (I boil for 30 min, and simmer for additional 90 min, you may need to add more water partway through cooking, I haven't perfected the amount yet).  In the mean time dice up veggies for topping.  Start heating oil in a frying pan to make tostadas, enough for frying.  Add taco seasoning to the wheat.  Fry enough tortillas for your family, they are best made fresh.  Top tostada with beans, then wheat, then veggies and a spoon of yogurt.  Mmmmmm.... these are wonderful!  Everything can be made ahead, except the tostadas (unless you buy them already made)
